Ingredients

For the Dough:

  • 1 cup ragi (finger millet) flour
  • 1/2 cup water (for kneading)
  • 1 tsp oil
  • Salt, to taste

  • 1/4 cup finely chopped cabbage
  • 1/4 cup grated carrots
  • 1/2 cup tricolored bell peppers, finely chopped
  • 1 tsp oil
  • 1/2 tsp balsamic vinegar
  • 1/4 tsp white vinegar
  • 1 tsp schezwan sauce
  • 4 cloves of garlic, minced
  • Salt, to taste
  • 4 tbsp water (for cooking)

Method

  • Prepare the Dough: Boil the water and pour it over the ragi flour. Cover and let it sit for 5 minutes. Then, add salt and oil, and knead into a smooth dough. Set aside.
  • Making the Filling: In a pan, heat oil and sauté cabbage, carrots, and bell peppers. Add the minced garlic, vinegars, schezwan sauce, and a pinch of salt. Add a little water and cook until the vegetables are tender yet crisp. Set aside to cool.
  • Shaping Dumplings: Roll out the dough on parchment paper to prevent sticking (as ragi dough can be sticky). Cut out small circles.
  • Filling and Sealing: Place a spoonful of the veggie filling on each dough circle. Using the parchment paper, fold and seal the dumplings.
  • Steaming: Steam the dumplings for about 10 minutes, or until they are firm and cooked through.
