Ingredients:
- 54g Raashan's All-Purpose Millet Flour
- 30g Butter
- 25g White Sugar
- 25g Brown Sugar
- 2g Baking Soda
- 1 Large Egg
- 2ml Vanilla Essence
- 1g Salt
- 45g Peanut Butter
- Dark Chocolate (as required)
- Sugar for sprinkling
Preparation:
- In a planetary mixer, combine brown sugar, white sugar, butter, and peanut butter. Beat until the mixture becomes fluffy.
- Add the egg and vanilla essence to the mixture, and continue beating for another 5 minutes until well incorporated.
- Sift together the millet flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until a dough forms.
- If the dough is too soft, refrigerate it for 1 hour to firm it up.
- Preheat the oven to 180°C (356°F).
- Roll the dough into small balls and coat them with sugar. Place them on a baking tray lined with parchment paper.
- Bake the cookies in the preheated oven for 10 minutes.
- After 10 minutes, remove the cookies from the oven and gently press a piece of dark chocolate into the center of each cookie.
- Return the cookies to the oven and bake for an additional 5 minutes.
- Once baked, allow the cookies to cool before serving.
