Ingredients:

  • 54g Raashan's All-Purpose Millet Flour
  • 30g Butter
  • 25g White Sugar
  • 25g Brown Sugar
  • 2g Baking Soda
  • 1 Large Egg
  • 2ml Vanilla Essence
  • 1g Salt
  • 45g Peanut Butter
  • Dark Chocolate (as required)
  • Sugar for sprinkling

Preparation:

  1. In a planetary mixer, combine brown sugar, white sugar, butter, and peanut butter. Beat until the mixture becomes fluffy.
  2. Add the egg and vanilla essence to the mixture, and continue beating for another 5 minutes until well incorporated.
  3. Sift together the millet flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until a dough forms.
  4. If the dough is too soft, refrigerate it for 1 hour to firm it up.
  5. Preheat the oven to 180°C (356°F).
  6. Roll the dough into small balls and coat them with sugar. Place them on a baking tray lined with parchment paper.
  7. Bake the cookies in the preheated oven for 10 minutes.
  8. After 10 minutes, remove the cookies from the oven and gently press a piece of dark chocolate into the center of each cookie.
  9. Return the cookies to the oven and bake for an additional 5 minutes.
  10. Once baked, allow the cookies to cool before serving.
