Ingredients:
Dry Ingredients:
- 1/2 cup Jowar Flour (60g)
- 1/2 cup Whole Wheat Flour (60g) OR Raashan's all purpose millet flour
- 1.5 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 cup Desiccated Coconut (90g)
Wet Ingredients:
- 1/2 cup Softened Butter (100g)
- 1/2 cup Dahi (120g) (yogurt)
- 1/2 cup Sugar, Brown Sugar, or Jaggery Powder (100g)
- Splash of Vanilla Extract
Additional:
- 1/2 cup Milk (120g)
- Nuts for topping (optional, I added almonds)
Instructions:
Prepare Dry Ingredients: In a bowl, combine 1/2 cup Jowar Flour, 1/2 cup Whole Wheat Flour, 1.5 tsp Baking Powder, 1/4 tsp Baking Soda, and 1 cup Desiccated Coconut. Mix well and set aside.
Prepare Wet Ingredients: In a separate bowl, add 1/2 cup Softened Butter, 1/2 cup Dahi, 1/2 cup Sugar (or Brown Sugar/Jaggery Powder), and a splash of Vanilla Extract. Mix until well combined.
Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing slowly. Then, add 1/2 cup Milk and fold the batter until well incorporated.
Prepare for Baking: Transfer the batter to muffin liners, filling each about 2/3 full. If desired, sprinkle some nuts on top for added crunch and flavor.
Bake: Preheat your oven to 180°C (350°F). Bake the muffins for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
